Food & drinks:
- Nojito, 9/10, very beautiful presentation, properly on the dry side, but we did ask to make it a real cocktail with additional gin and it was.... Weak. Almost couldn't taste the alcohol at all, what a shame because a little more gin and it would have been perfect
- Broccolini Blueberry Salad, 10/10, it was one of the best showings of the night actually. There's a mild spicy kick to it that really made it complete
- street corn pork ribs, 9/10, flavor great, texture perfect, not greasy, the only possible weakness is, I think the breading was just slightly too thick compared to the meat
- tomatillo carpaccio, 8/10, jarringly beautiful presentation, but while it excelled in style, it lacked in substance. It was tangy but otherwise a little bland.
- seared tuna, 8/10, good but I wish the flavor is slightly stronger. Good texture combo between the crunchy bread base and the soft tuna
- skewered Bison, 9/10, the bison Skewers themselves are just respectable enough, but it's the mildly sweet corn sauce that became the saving grace
- duck croquettes, 8/10, something was missing and I was not sure what. Texture was good (maybe very slightly dry but still good), taste was proper (just a little too mild maybe), the accompanying sauce was good but again just not strong enough. It's the accumulation of little things that just weakened this dish from all angles of an otherwise decent bite
- Pavlova, 11/10, yes: 11! This was the star of the night, surprisingly. Typically in a restaurant like this, the dessert tend to be an afterthought. But this pavlova... Perfect. Extremely beautiful presentation. Combination of coconut whipped cream + blueberry+ white chocolate + meringue, giving you four different textures and flavors that somehow just worked. A must try.
Service & ambiance: can't complain, knowledgeable server (Mitch), food came out relatively quick, beautiful internal decor.
Value: serving size very fair for the price and location. Nothing to complain here
Parking: terrible during peak hours, but that's just Banff. Nothing anyone can do about it.
Outdoor seating available but I preferred the indoor ones near the window. You can adjust the blinders level to your liking.
