I can't express in words how happy I am to be here, the source of all the happiness that Osteria di Casa Chianti gave me
Today's table wine of choice is Biondi-Santi's BDM 2015, which is in excellent condition, excellent after an hour in the decanter, it doesn't smell particularly aromatic, but when drunk, it feels like being in the Violet Rose Estate, with earthy aromas after the rain, smooth tannins but very present, With some notes of advanced graphite and raw mushrooms from the forest, followed by a humidor with a hint of smoke, it couldn't be more satisfying, and perfectly matched with the black truffle, I was thoroughly absorbed
The food is perfect for me tonight, the black truffle mix selection of organic thick-cut salami from 20 meters away from the restaurant, Pecorino from local DOC, polenta corn cake and local boar meat sauce, all just right, the salty level is very restrained but the umami is a high punch, Drizzled with plenty of local, organic extra virgin olives, I can't describe the delicacy, raw and raw, yet full of well-designed sophistication
Roast steak, roast wild pigeon, roast pulled pork, roast wild red chicken are all slow-roasted with charcoal, and the ingredients are only sourced locally. The aroma of the charcoal fire and the taste of the meat itself is an indescribable shock. What shocked me more is their homemade wild berry honey sauce to match the roast pork and pickled Onions, which is a very rare food experience that makes my eyes light up
But you can see how serious the shop is when you eat this gnocchi with Onions and artichokes. Gnocchi is airy, soft and earthy, like a light cheesecake with a salty potato flavor
The owner, MAX, was the warmest and funniest person I met during my entire trip to Italy, showing me their proud "most beautiful toilet", showing me his wine cellar, and even taking me on a tour of the back kitchen in the middle of our conversation to greet the chef and "show off" their charcoal grills and roasts
Everything I've done here has been so enjoyable, and this is one of my favorite restaurants in Italy, even though I've eaten a lot of expensive restaurants before!!
