土方歳三の生家のすぐ傍にあります。
開店10分前に並んで13人目、客席が6名なので一回転目には
入れず中の順番待ち席で座って待ちました。
暖簾の色でスープが変わる言う事ですが、当日はメヂカを表す赤色。売り切れで具材が全部入りの様な特しかなく特メヂカ醬油の食券と気になった替玉中華を購入。ご主人が一杯ずつ丁寧に作り、ラーメン店ですが箸入れがあり、オリジナル。
箸も良い物が使われ焼き印もあるのも印象的。
特めじか醬油ですが特とあって、鴨ロース、浅利、チャーシュー、玉子、カイワレ、青菜、海苔と覚えられない程の沢山の具材がのっていました。スープは枯節の様な香ばしい香りに、塩味が立ちます。麺は極細麺で柔らかなイメージ。
替玉中華は麺だけでは無くスープ付の混ぜ蕎麦の様。
予め主人から味がかなり濃いと説明があったのですが、
その通りでより塩味が立つ印象。最初のラーメンと違い
煮干し入りのお酢、出汁醬油が提供され徐々に味を変えるようです。添えられた山葵やお酢で尖った塩味が抑えられ、卵の黄身でまろやかに纏まります。
気温が高い中で歩き回り汗をかいた後でしたので
良かったです。

The owner carefully makes each bowl, and even though it's a ramen shop, there is a chopstick holder, which is original.
It is also impressive that the chopsticks are of good quality and have a branding iron.
It was made with tokumejika soy sauce, but it was special, and it had so many ingredients on it that I couldn't even remember: duck loin, asari, char siu, egg, seaweed, greens, and seaweed. The soup has a fragrant aroma similar to dried bonito flakes and a salty taste. The noodles are super thin and have a soft texture.
Kaedama Chinese noodles are not just noodles, but are like mixed soba noodles with soup.
